Scoop cookies. Drop rounded tablespoons of dough onto prepared baking sheets, about 2 inches apart.
Bake for 10–12 minutes, until the edges are set and the tops look slightly crackled. The centers should still look soft.
Cool. Leave cookies on the baking sheet for 5 minutes before transferring to a cooling rack.
