Keep them cool, dark, dry, and ventilated. Protect them from sunlight and heat. Check them periodically for soft spots, mold, rot, extensive greening, and other signs of deterioration.
And remember that raw potatoes and cooked potatoes are two very different storage situations.
So the next time you see a bag of potatoes sitting quietly on the counter, you don’t necessarily need to reach for the trash can.
